Mama Tang's Veggie Fried Rice

Ingredients:

  • 2 cup(s) of cooked white Jasmine rice
  • 1/2 cup(s) of mixed veggies
  • 1/3 cup(s) of Mama Tangs Original or Spicy
  • 2 eggs scrambled eggs
  • 1 Tbsp of chopped onion
  • 1 Tbsp of minced scallion and cilantro
  • Sea salt
  • Pepper
  • Olive oil

Instructions:

Prepare the Scrambled Eggs:

  1. Whisk two eggs.
  2. Add 1 Tbsp of Olive oil to skillet.
  3. Add whisked eggs.
  4. When fully cooked remove eggs and slice into 1/4 inch cube.

Cook the Fried Rice

  1. Add 2 Tbsp of Olive oil to skillet.
  2. Add garlic and onion.
  3. When lightly browned, add and mix 2 cup(s) of rice.
  4. Add 1/3 cup(s) of MT Spicy or Original.
  5. Add 1/2 cup(s) of Veggie.
  6. Add a couple pinches of Sea salt and pepper.
  7. Mix and stir with spatula until the rice is slightly dried.
  8. Add scallions, cilantros and eggs.
  9. Mix and stir for another 5 minutes and then enjoy!
