Mama Tang's Veggie Fried Rice
Ingredients:
- 2 cup(s) of cooked white Jasmine rice
- 1/2 cup(s) of mixed veggies
- 1/3 cup(s) of Mama Tangs Original or Spicy
- 2 eggs scrambled eggs
- 1 Tbsp of chopped onion
- 1 Tbsp of minced scallion and cilantro
- Sea salt
- Pepper
- Olive oil
Instructions:
Prepare the Scrambled Eggs:
- Whisk two eggs.
- Add 1 Tbsp of Olive oil to skillet.
- Add whisked eggs.
- When fully cooked remove eggs and slice into 1/4 inch cube.
Cook the Fried Rice
- Add 2 Tbsp of Olive oil to skillet.
- Add garlic and onion.
- When lightly browned, add and mix 2 cup(s) of rice.
- Add 1/3 cup(s) of MT Spicy or Original.
- Add 1/2 cup(s) of Veggie.
- Add a couple pinches of Sea salt and pepper.
- Mix and stir with spatula until the rice is slightly dried.
- Add scallions, cilantros and eggs.
- Mix and stir for another 5 minutes and then enjoy!
